VANILLA TOASTED ICE CREAM

This is easy to make, smooth and creamy, free from any refined sugars and preservatives is the ideal food swap for those commercial store bought ice-creams.


Most store bought ice-creams are loaded with refined sugars along with some having significant amounts of (HFCS) High Fructose Corn Syrup.


High-fructose corn syrup (HFCS) is an artificial sugar made from corn syrup.

Health experts believe that added refined sugars and HFCS are key factors in today’s obesity epidemic. (1.)


Most starchy carbs, such as rice, breaks down into glucose⁠, the basic form of carbs. However, table sugar and HFCS comprise around 50% glucose and 50% fructose. (2.)


So basically, glucose is easily transported and utilized by every cell in your body. It’s also the predominant fuel source for high-intensity exercise and various processes.


However, the fructose from high fructose corn syrup or table sugar needs to be converted into glucose, glycogen (stored carbs), or fat by the liver before it can be used as fuel.

Like regular table sugar, HFCS is a rich source of fructose. In the past few decades, the intake of fructose and HFCS has increased significantly.


Before table sugar and HFCS became affordable and widely available, people’s diets used to contained only small amounts of fructose from natural sources, such as fruits and vegetables. (3.)


However, it is important to note that the negative effects of fructose in added sugar, including HFCS, should not be compared with the fructose in fruit.


It’s difficult to consume excessive amounts of fructose from whole fruits, which are healthy and safe in sensible amounts.


HFCS has also been linked to the increase of liver fat to a greater extent than equal amounts of glucose.

Therefore over a long period of these added sugars can lead to fat accumulation linked to chronic diseases, such as fatty liver disease and type 2 diabetes, along with inflammation. (4.)



So, why not swap out those commercial store bought ice-creams for something that is minimally processed, along with it being a SMART Food swap.

VANILLA TOASTED ICE CREAM


INGREDIENTS

1 Can of chilled coconut milk (refridgerate overnight)

3/4 Cup smooth macadamia butter or cashew butter can sub for any nut or seed butter of choice

1/4 Cup Monk Fruit Syrup

1/2 Tsp coconut extract

2 Tbsp keto chocolate chips


INSTRUCTIONS


Start by placing your coconut milk in the refrigerator to chill ideally over night.

Then start by preparing a freezer-friendly loaf pan. Place it in the freezer prior to making the ice-cream.


Using a high speed blender, or food processor combine all your ingredients and allow to blend until thick and creamy.


Once blended, transfer the ice cream mixture into the pre-frozen pan/container. Then gradually fold in some extra coconut power crunch.


Place it in the freezer, for the first hour, regularly stir the mixture to ensure it doesn’t freeze into an ice block.

Thereafter allow to freezing for 2-3 hours. Allow to thaw for 25min before serving.

Scoop out into your bowl or cone.
