I love creating healthier food swaps, especially when it comes to desserts.
Think of it as a basic formula, finding something that is just that little bit healthier is already a step in the right direction.
Ladies, lets talk sugar! It is not really our friend. That does not mean that we can not enjoy some sweet desserts. It means we need to choose the right 'sweetness' for our health.

Sugar not only provides major highs and lows in mood and energy, it can also disrupt one of the most powerful hormones in the body AKA insulin.
And insulin is closely connected to all of the other hormones in your body, including estrogen and testosterone.
Not all sugars are created equal nor does your body digest certain ingredients the same as others. Calories are not equal, the molecular structure of the type of food does matter. Sugar in an apple will be digested differently than having a sugary drink that perhaps has the same calories, but less the other nutrients the apple might have.
Most of my recipes, I aim to use natural sugars that fall into the LOW GI spectrum as well as adding Monk fruit, monk fruit is my go to baking sweetener apart from banana etc. Monk fruit does not spike blood sugar levels and it is actually high in antioxidants. Most find monk fruit a lot easier to digest than other sweetener alternatives. (Ref **)

I made these no bake pies, without the use of dairy, refined sugars and of course trans fats.
Less complicated ingredients equals easier digestion by the body and less toxin build up with less the sugar highs. Fiber, protein and healthy fats.
LEMON COCONUT NO BAKE PIES
1 large pie or 4 small pies depending on your mould
INGREDIENTS
Base
3 Nuzest Clean Lean Lemon Coconut bars
1 Tbsp coconut oil
1/3 Cup desiccated coconut
1/3 Cup monk fruit syrup
Creamy layer
1 Cup pre-soaked cashews
1/2 Cup coconut yoghurt
1/3 Cup monk fruit syrup
2 Scoops Nuzest Clean Lean Vanilla protein
1/3 Cup lemon juice
1 Tsp vanilla extract
1/3 Cup ice cold coconut milk
INSTRUCTIONS
Start with the base ingredients first, by adding your base ingredients to your food processor, blend until a dough consistency. Press the base mixture firmly into your moulds. Place them in the freezer whilst making your creamy layer.
With the creamy layer use a high speed blender, blend until smooth and creamy. If the mixture is not smooth, add a dash of coconut milk or coconut cream.
Freeze for 1.5 hours to set before serving.
