VANILLA ALMOND PANCAKES WITH STRAWBERRY CHOCOLATE FILLING


Extremely soft and fluffy pancakes which are low in carbs and healthy too! Just in time for the weekend. Now, I am not a baker. So, these are made for majority of us who don’t bake :)


These low carb pancakes are loaded with protein not just from the protein powder but by adding whole foods into the mix. Full of fiber with no sugar! Naturally gluten free, paleo, keto, low carb and it is HORMONE Friendly too of course.



What makes foods hormone friendly? The fabulous 4 of course, protein, fats, fiber and whole foods (less minimally processed foods).



What mucks up the hormones, SUGAR! Processed foods and of course commercial store bought pancakes, lucky we can make our own healthy version right.


This pancake mix is enough for two adults.

VANILLA ALMOND PANCAKES WITH STRAWBERRY CHOCOLATE FILLING


INGREDIENTS


For the pancakes


1/3 Cup coconut flour

2/3 Cups blanched almond flour

1 Tsp baking powder

2 Large eggs

1/3 Cup melted coconut oil

2 Tbsp monk fruit syrup

1/2 Cup coconut cream

1 Tsp vanilla extract

1/3 Cup nut milk

1 Scoop Nuzest Clean Lean Vanilla Protein


Coconut strawberry vanilla cream:


1 Scoop Nuzest Kids Good Stuff Strawberry

1 Tsp vanilla extract

1 Cup coconut vanilla yoghurt


Chocolate paste:


Hazelnut butter (natural)


INGREDIENTS


Add all the ingredients for the pancake mix together, mix until a smooth batter is formed, if it is still a bit sticky just add a little more nut milk.


Grease a non-stick pan on medium heat. When hot, pour small 1/4 cup portions of batter and if possible, place a lid on top. When bubbles start to form on the edges, flip and continue cooking until slightly golden. Repeat until all the pancake batter is used up.


Allow the pancakes to cool, set aside whilst making your creamy layers. With the coconut strawberry vanilla cream, just combine all the ingredients until smooth.


I used a chocolate hazelnut butter instead of making it. I got this from my local health food store.


Sprinkle the pancakes with some sesame seeds, a few slices of fresh strawberries and finally topping it off with a little dark cacao drizzle for that final finish.
