STRAWBERRY VANILLA COLLAGEN BITES

Move over chia porridge…These hormone friendly, gut loving, bone building bites is just so delicious and filling! I love having these pre-made and kept in the fridge, especially when those hormonal cravings hit.



Chia seeds on their own can be pretty boring, but they add a beautiful gel-like texture to most meals and are so versatile to take on any flavour you decide to add to them.


We have all tried soaked chia seeds that give us a porridge/pudding texture. However I wanted to share this delicious twist by using chia seeds.

I call them the “Collagen jelly bites”.


Chia seeds are not only nutritionally dense food but are considered to be a super food.


Full of Omega 3 fatty acids, protein (and this protein is complete, containing all essential amino acids), antioxidants, vitamin Bs and are rich in minerals. They are gluten free and are low in calories and full of fiber.


The easy to digestible soluble and insoluble fiber is gentle on the gut. Chia seeds digest slowly, which tends to stabilize blood sugar and can be of help to people with unstable blood sugar such as hypoglycemia and type 2 diabetes.

Chia seeds contain high levels of calcium, together with boron, which is of great benefit to bone health.


For example, one tablespoon of chia seeds contains as much calcium as two glasses of milk. Chia seeds can also prolong hydration and help retain electrolytes.


All of chia’s properties, from fiber, vitamin Bs to proteins, are essential in balance your hormones naturally.

STRAWBERRY VANILLA COLLAGEN BITES


INGREDIENTS


3 Tbs gelatine

1 Cup warm water (not boiling)

2/3 Cup chia seeds

1.5 Cup coconut water

4 Servings Nuzest Clean Lean Vanilla Protein


Toppings


1/2 Cup chopped strawberries

1/3 Cup raw dark cacao


INSTRUCTIONS


Start by adding the gelatine mixture to the warm water mixture, mix well and set aside . Start adding all the other ingredients to a bowl, followed by the gelatine mixture, mix well. The mixture will start stiffening. Therefore its key to scoop the mixture into your moulds as soon as and press the mixture down firmly. Before placing your mixture in the moulds, be sure to add some fresh strawberry slices and of course some cacao nibs. Pop the mixture in the fridge and allow to set for 3 hours before serving.


You can keep these in the fridge for 2 weeks. Healthy easy to make keto, paleo and bone building super bites.
