NO BAKE PUMPKIN CHOCOLATE SPICE CHEWS

It is that time of year, depending on what part of the world you are going into Fall or Summer. We can all agree October calls for pumpkin spice and everything nice
I love using pumpkin as much as I can, especially the in the whole. From the skin to the flesh to the seeds.
I had some left-over roasted pumpkin that I kept overnight in the fridge and decided to make a healthy eat sweet dessert to outsmart those ‘CRAVINGS’.

It is even a great “Trick or Treat” alternative to those not so healthy candies.
These easy to make no bake pumpkin chocolate spice chews are chewy, creamy and free from any processed ingredients.
I added some Nuzest Good Green Vitality to the filling not only does it work well with the flavours, but also for the fact that it gives us that additional boost especially during the times where we experience the seasons changing.

Pumpkin also benefits us as it is loaded with vitamins and minerals, along in having a high-water content.
As pumpkin is also high in antioxidants like beta-carotene due to the orange colour our bodies convert it into Vit A.
Vit A is also strongly linked to boosting our immune system.
So, why not create a dessert that is healthier with added benefits.

Serv: 8-10 Bites
INGREDIENTS
8-10 Large Medjool dates (pips removed)
For the Filling:
1 Tbsp crushed toasted coconut crunch @cocobynuco
1 Serving Nuzest Good Green Vitality
1/3 Tsp cinnamon spice
1/3 Cup pumpkin puree
1/3 Cup runny peanut butter
1 Tsp coconut yoghurt
For the Coating:
1/2 Cup melted dark cacao
1 Tbs monk fruit sugar
1/2 Tsp cinnamon Spice
INSTRUCTIONS
Start by mixing the ingredients for the filling together until a smooth paste. Depending on how runny your peanut butter is will affect how easy the filling mixture blends.
If you find it is too dry, then just add a little bit of coconut oil (1 Tsp). Once a paste is formed, you can start filling your dates. Pressing firmly allowing the filling to be inside the dates as you close them.
Pop them into the freezer for 20 min to set before you coat them with your chocolate cinnamon spice coating.
Once you have coated them with the chocolate and cinnamon sugar spice. Pop them back into the freezer for another 10min to set.

NOTES: You can keep the remainder in the freezer for up to 3 weeks.
