STRAWBERRY VANILLA ALMOND FLOUR COOKIES

#Cookies is not something I bake that often. But when I do, I look for healthier swaps when it comes to the ingredients.


These easy to make strawberry vanilla almond flour cookies are simple, delicious and free from trans fats, sugars and gluten.



It is sometimes tricky baking the gluten-free way, but with this recipe you can just throw it all together and bake it.


I enjoy using almond flour, it has a sweet taste and it is so versatile. With this recipe I do recommend using runny peanut butter instead of the drier chunky peanut butter.



Please also feel free to swap the dehydrated strawberries to something else, you can perhaps try some almond flakes, or some might like to try some chocolate chips.



I also added the Nuzest Kids Good stuff powder into this, not only is it free from processed ingredients and preservatives, it is a great multi-vitamin and it gives a delicious subtle strawberry flavour. You can find my discount codes under my "discount page".



Yield: 12 Cookies


INGREDIENTS


2 Cups almond flour

1/2 Tsp baking powder

1/2 Cup dehydrated chopped strawberries

1 Large egg

1 Tsp vanilla extract

1/3 cup melted coconut oil

1 Tbsp peanut butter

2 Scoops of Nuzest Kids Good Stuff strawberry

3 Tbsp monk fruit syrup


INSTRUCTIONS


Preheat the oven to 180C/350F. Line a large baking sheet with parchment paper and set aside.

In a large mixing bowl, add your almond flour and baking powder and mix well. Add your melted coconut oil, monk fruit syrup, egg and vanilla extract, and mix until combined. Then follow with the rest of the ingredients. Using a rubber spatula, fold through your strawberry chips.


Form 12 bite size balls, place them on your lined sheet and lightly press them down. Bake for 15-20min depending on how thick they are. Bake until the edges are golden brown.
