NO BAKE CEREAL FUDGE BARS

Most cereal bars are marketed to be “healthy” especially when it comes to packing kids lunch boxes.


These so called “healthy bars” are loaded with added refined sugars, calories and of course artificial ingredients.


Therefore, I decided to share a healthy recipe swap that will enable you to make your own homemade bars.



Real healthy cereal bars, should be packed with fiber, protein, healthy fats especially those essential fatty acids along with vitamins and minerals.

I made this meal swap with the following in mind - Kid Friendly, plus it being Keto, Paleo and vegan friendly.


These No Bake cereal Fudge bars are made with Peanut butter and tahini, the option is yours. You can swap out the Peanut Butter for any nut butter of your choice.



When choosing your peanut butter make sure it is 100% pure peanut butter without any added ingredients.


Good quality peanut butter has many benefits, some of these are the fact that it is a good source of healthy fat, monounsaturated fat.



NO BAKE CEREAL FUDGE BARS

INGREDIENTS


2 Cups of Coconut Crunch

1/3 Cup of dark sugar free chocolate **

1/2 Cup smooth peanut butter

1/2 Cup tahini paste (hulled)

1/3 Cup Monk Fruit Syrup *

1/3 Cup coconut oil


INSTRUCTIONS


Using a microwave friendly bowl, add your nut butter of choice, tahini paste, coconut oil, along with the dark chocolate and place in the microwave for 2 min, allowing the mixture to melt.


Once melted, stir until smooth. Once the mixture is smooth and runny, pour the melted mixture to the coconut crunch along with adding in the Nuzest Chocolate protein powder and monk fruit syrup.


Fold the mixture evenly, once the mixture is evenly covered, scoop the mixture into your choice of moulds, or either in a 8 x 8 inch tray that is lined out with non stick baking paper.


*Monk Fruit syrup is high in antioxidants, along in having anti-inflammatory benefits.


Monk fruit is also linked to improving insulin response and does not affect blood sugar levels the way natural sugars do, according to research studies. This means it can provide the sweet flavour we strongly crave without the damaging side effects.


Some studies indicate using monk fruit sweetener may help those already suffering from obesity and diabetes from furthering their condition.


Another benefit compared to other sweeteners is that the sweetener is extracted from non-GMO fruit, unlike table sugar and high fructose corn syrup.
