Simple, delicious yet fuss free meal prepping is what works. You want to look at what works for you within your schedule and what is sustainable in your lifestyle along with its demands.


Take the drivers seat and kickstart healthy morning habits by starting slowly as you progressively reach a rhythm.


Let’s avoid those annoying reactive breakfast grab and go’s we often make when we are rushing.


Creating a habit requires taking action. A meal prep ritual can perhaps be done by just taking 10min out of your evening time (finding time for your health is a start) perhaps use 10min of your tv and sofa time to quickly put together a healthy yet delicious porridge for you the next morning.


Putting your mind at rest, knowing you will leave the house with a healthy meal. You can even make a double batch and keep for two mornings in a row.





I created this easy creamy vanilla blue-blackberry porridge for all lifestyle choices, from vegan, paleo, to gluten-free as well as sugar-free.


This breakfast porridge is packed with wholesome ingredients that are minimally processed and deliciously creamy.

A touch of sweetness, with a hint of vanilla. Think of a perfect superfood breakfast loaded with nutrients, omega-3s and powerful antioxidants.




HEALTH BENEFITS OF CHIA SEEDS


Chia seeds are among the healthiest foods on the planet. Despite their tiny size, chia seeds are full of essential nutrients. They are an excellent source of fiber, omega-3 fatty acids, and proteins as well as a good source of iron and calcium (1).


Chia seeds are loaded with fiber, and by loaded I mean really loaded. Because of their rich fiber content, chia seeds are great for digestive health. The fiber acts as a prebiotic and provides fuel for the good bacteria in the gut (2).

Plus, the fiber in chia seeds absorbs water and expands in the stomach, which keep us full longer and helps with weight loss (3, 4).


CREAMY VANILLA BLUE-BLACKBERRY PORRIDGE

INGREDIENTS

Blueberry porridge layer:


1/2 Cup of blue + Blackberries

3/4 Cup of Macadamia nut milk

1/3 Cup Chia seeds

1 Tsp vanilla extract

1 Tsp Monk Fruit syrup

2 Tbsp coconut yoghurt

1 Tsp Hempseeds


Vanilla cream porridge layer:


1/2 Cup of coconut flesh

3/4 Cup of Macadamia nut milk

1/3 Cup Chia seeds

1 Tsp vanilla extract

1 Tsp Monk Fruit syrup

2 Tbsp coconut yoghurt

1 Tsp Hempseeds


INSTRUCTIONS


Start by blending the blue + blackberries with the macadamia nut milk. Once blended add all the other ingredients from the Blueberry porridge layer and set aside whilst you prepare the vanilla layer.


For the vanilla layers, start by blending the coconut flesh, macadamia nut milk untill it reaches a thick and creamy consistency. Add in all the other ingredients.


Take your two overnight glass jars and start by layering them.


First, the blue + blackberry layer, followed by some dehydrated blueberries, with some coconut crunch, with a dollop of coconut yoghurt, thereafter followed by your creamy vanilla chia layer.


Cover and keep in the fridge over night, option you can allow it to set for 20min before serving, if you wanted to have it on the same day.


The next day you can sprinkle some delicious toasted coconut from @cocobynuco along with some pistachio and fresh berries.


Note: Depending on the size of your overnight jars, you might have extra. So you could end up with 3 Glass jars depending on the size.
