CARAMELISED PEACH PUDDING

May/June is the beginning of peach season, which continues until late September.



Peach season is at its peak in July and August.


Stone fruit of all kinds are a great seasonal summer treat, and peaches are a perennial favourite. The lucky among us have childhood memories of incredibly juicy peaches eaten outdoors because they made such a sticky mess







CARAMELISED PEACH PUDDING

Serv: 4 Pax


INGREDIENTS


6 Peaches, sliced and halved with pits removed

1/3 Tsp salt

4 Tbs coconut oil

1/3 Cup monk fruit sugar

1 Tsp vanilla extract


INSTRUCTIONS


Preheat the oven at 180C Degrees.


Bake the peaches in the oven by adding the coconut oil, vanilla extract, salt and monk fruit sugar. Allow to bake for 10min at 180C until they are golden brown.


Once golden brown, remove and allow to cool. Once cooled place the peaches into your blender, add the following to the peaches:


2 Cups ice cold coconut milk

2 Large medjool dates

5 Blocks of ice

1 Tsp flaxseed meal


Once blended, scoop out into your dessert bowls, sprinkle with toasted coconut @cocobynuco some pumpkin seeds and enjoy x
